																			Peel the carrots and siscard the woody part. Cut the flesh into 
																				large pieces and prick all over with a fork. 
																		
																			Put the pieces in a saucepan with enough water to cover and 
																				bring to boil.
																		
																			As soon as water starts boiling, remove from heat and drain off 
																				the water.
																		
																			Prepare the one string syrup by dissolving the sugar in the 
																				water.
																		
																			Boil gently and add carrots to the syrup and stir in the lemon 
																				juice.
																		
																			Continue cooking over a low heat until the carrots are tender 
																				and the syrup is thick.
																		
																			Allow to cool then stir in the cardamom before serving.
