II Baingan-Da- BhurtaII


  • 2 Aubergines / Eggplants (Baingan)
  • 4 onions (finely chopped)
  • 2 green chilies (chopped)
  • 4 tomatoes (finely chopped)
  • Salt to taste
  • 1/4th cup oil
  • 2 tsp grated ginger
  • 1/2 tsp chili powder
  • 2 tbsp chopped coriander leaves
  • 1/2 cup shelled peas

Preperation :

  • Keep the aubergines whole. Apply oil and roast it on a gas flame or a barbecue. When it is cool, peel the burnt skin.
  • Fry the onions until transparent, Add the tomatoes, chili powder and green chilies.
  • Fry until the tomatoes are mushy. Add the green peas.
  • Now add the peeled and mashed aubergine and fry for few minutes. Add salt.
  • Garnish with chopped coriander.
