Courgettes with Onion and Garlic

Ingredients:

1 tbsp Olive oil

1 tbsp sunflower oil

1 Large onion, chopped

1 garlic clove, crushed
- 4-5 medium courgettes, cut into ½ in
slices

2/3 cup vegetable stock
- ½ tsp chopped fresh coriander
-
Salt and ground pepper
Preparation:
- Heat the olive oil and sunflower oil in a
large frying pan and fry the onions and garlic over medium heat
for 5-6 min until the onion has softened and beginning to brown.
- Add the sliced courgettes and fry for about 4
minutes until they just begin to be flecked with brown, stirring
frequently.
- Stir in the stock, coriander and seasoning
and simmer gently for 8-10 minutes or until liquid has
evaporated
- Spoon the courgettes into a warmed serving
dish.
