II Courgettes with Onion and Garlic II

Ingredients:

  • 1 tbsp Olive oil

  • 1 tbsp sunflower oil

  • 1 Large onion, chopped

  • 1 garlic clove, crushed

  • 4-5 medium courgettes, cut into ½ in slices
  • 2/3 cup vegetable stock

  • ½ tsp chopped fresh coriander
  • Salt and ground pepper

Preparation:
  • Heat the olive oil and sunflower oil in a large frying pan and fry the onions and garlic over medium heat for 5-6 min until the onion has softened and beginning to brown.
  • Add the sliced courgettes and fry for about 4 minutes until they just begin to be flecked with brown, stirring frequently.
  •  Stir in the stock, coriander and seasoning and simmer gently for 8-10 minutes or until liquid has evaporated
  • Spoon the courgettes into a warmed serving dish.
